They might photoshop them, my Parasaurolophus' colour pattern is a far cry from the one in the photo, my one is far more dull with less contrast.

It looks like they use a professional to do the paint jobs in the official photos too, which might be better at hiding joints, and look more detailed. Something the mass production process can't hope to replicate.

The Publicity pictures are probably the paint masters from which the production model is based on. They are usually done from the original sculpt, done before things like ease of procuction are taken into account.
